It took around 5 hours to scan the full logical drive 6 physical hard drives but it fixed all the parity issues. I then proceeded to boot again and see if it would start SBS and I was finally able to get it to a gray screen where the OS ran "chkdsk" and was able to repair itself. After that, SBS booted normally.
It took me 3 painful days to figure this out and I hope this helps other avoid the issue I went through. If you're asking for technical help, please be sure to include all your system info, including operating system, model number, and any other specifics related to the problem.
